As we continue learning how to Iron Chef our bi-weekly produce box, one of my recent favorite creations has been stuffed peppers which have been plentiful lately.
One week we stuffed them with quinoa, carrots, onion & feta:
and the next week we stuffed them with crab and topped them with avocado:
I also whipped up a small plum-nectarine cobbler:
mmm. what will the next produce box bring?
